This cuvée comes from a blend of three parcels in the villages of Savigny-lès-Beaune and Pommard. VINIFICATION AND REFINEMENT Harvest: manual, followed by hand and optical sorting of the grapes Vinification: after destemming the bunches, the ripest, healthiest berries are placed in vats for 15 to 18 days for cold prefermentary maceration, then for 5 to 6 days for alcoholic fermentation. These stages may be punctuated by several punchings of the cap and pumping-over Aging: in new barrels (20%), in barrels of one or two wines (30%) and in stainless steel vats, preceded by pneumatic pressing with separation of the juices Aging time: 15 to 17 months
